Tofu Mushroom Soup For your Soul




Have you ever been sick to a point where soup is the only "food" you can digest, crave or want? If you do, have been or is, right now, then this simple, easy to make, 7-ingredient soup is for you! I don't say things lightly but this soup is so good, it's easily a food for your soul as well. It's packed with powerful healing properties and bold flavors it's enough to bring your "grace" back without trying! Ahem, supernatural reference to those who is not on the know.

Back to my soup, this is one of the soups that I created that sustained my household during the flu invasion that made my husband and I sick. And during those times when solid food don't seem appealing at all, this soup nourished us back to better health. It's also good for the vegetarian soul.

Back to School is in full swing and keeping up with your kid's daily lunchbox demands require nothing more but an uncomplicated culinary creativity. It really doesn't need to be complex. In this recipe, I took inspiration from my favorite bagel sandwich at Bruegger's. One that my daughter also love. It's easy and quick to make which was more reason to include it in her perfect lunch options that I rotate each week.

A Fresh Approach to your Favorite Foods

Disclosure: I received a sample kit from Fresh Express to try their product in order to facilitate this review and create my own recipe. All opinions are mine and based on my personal experience. Yours may vary.

I should tell you that being married to a Vegetarian has its perk. It made me eat my veggies more! I also developed a healthier habit and when you're my age, it simply is THE best path to take! Age by no means go in reverse, so as we age, the more we need to think more of keeping ourselves healthy. But eating healthy shouldn't be too complicated or confusing or super-tedious in approach to achieving it.

Neither should it be like deer with headlights effect, where we stand frozen and spaced out when we think of "healthy food" - this especially if you're favorite food, like me, is FRENCH FRIES!

Filipino Champorado - The Breakfast of Champions (Recipe)


We have a family breakfast favorite that is exclusively eaten during the Winter months. One that was also a family favorite in my house growing up in the Philippines. Champorado! Dubbed as the breakfast of champions then and might as well be! Now, our version of the traditional Filipino Champorado is quite different though. It is made up of heartier ingredients and we certainly love it hot! Best breakfast food when it's chilly outside.

Meatless, Exotic Thanksgiving

Turkey is a major part of Thanksgiving but the same traditional menu every year is monotonous, boring, unexcitable and usually not vegetarian-friendly. Imagine yourself a vegetarian who have to bring your own food so you have something to eat at a dinner party you were invited to. Tragic isn't it? But vegetarian or not, there is no law that says you can't avert from tradition. This year, we're upholding the vegetarians and sparing the Turkeys (which is in shortage FYI) by going meatless and adding exotic dishes to spice up the menu. This is not your Grandma's traditional Thanksgiving menu!

Potato Pierogi - This is a traditional Polish dish. My husband is part-Polish. What better way to celebrate than to incorporate this dish to give our daughter a glimpse into his heritage. It's also his favorite so it's a win!

This is the first muffin I've ever baked and it have become a family favorite! Not surprising. We love Coffee and chocolates in this house and with both as main ingredients of this recipe, our response is automatic. We fell in love with it at first taste! My Filipino Heritage: Vegetarian Pancit aka "Maricris Noodles" Recipe


In my culture, rice is not the only staple food in our diet. As with most Asians, noodles and different varieties at that, dominates our dining tables. One of our traditional noodle dishes is Pancit, which is made of  rice noodles. It is usually cooked during special occasions like birthdays and holidays, but not in my home. I cook it at any given time since it has become a family favorite. On my daughter's birthday, I cooked it.  A mom friend's young daughter tried it and fell in love with it. She loved it so much she would frequently ask her mom to make it [the noodle dish] and say, "I want Maricris' Noodles". And that is how an ancient dish I love got renamed! And in honor of her renaming it, I'm sharing the recipe.

Blood Orange Cafe Mocha Recipe { Original }


I love coffee and it's not a secret. I even have a bumper sticker on my car that shamelessly tells the whole world about it! Now the only thing you won't hear me shouting about is the after-effect of the creamer or milk that makes my favorite drink as yummy as they are! It's the awful payment I have to pay to enjoy my favorite coffee. It sucks but hello Lactaid! I'm a half-and-half creamer kind-of-gal but I'm also willing to try anything to enjoy my coffee without the gory, nasty side effect of being lactose-intolerant. Thus I tried my creative genius on Lactaid milk and created an original recipe incorporating my favorite chocolate bar and favorite blended coffee drink - Mocha! - and what do you know?! It turned out Yummmmyyyy!!!

Creative Cooking: No Fuss Chocolate Croissant



Oyyyy I "baked" today and fortunately, no disaster ensued. Successsssss! Ok, you should know baking, to me,  only usually occurs once in a blue moon {maybe the moon is blue today}. I'm an awesome cook {ahem!} it's a given,  but pleeeeazzzeee don't ask me to bake. Ironically, when you're a mom there are moments where you can't deny your child baked goodies. Why was oven ever invented? Anyway, THAT moment was today. And when it is, I make sure I get creative. I have to be yo know. My victim? Classic plain Croissant.

Natural Remedy: Honey Lemon Ginger Zinger For Sore Throat and Cold



Summer cold have found its way to my hubby. Bless his heart. He's been miserably coughing and have been suffering with sore throat as well. If you know us, especially him, you'll know that we're not big fans of medicines and would rather prefer not to take them if we can. With this being, I was on the lookout for a great natural remedy to soothe his throat, ease his coughing and relieve sinus congestion at the same time. Thank God for for Ginger, Lemon and Honey! They're exactly what I needed for the concoction I was thinking of doing! And one with a Zing!
