Mocha Cappuccino Muffins Recipe


This is the first muffin I've ever baked and it have become a family favorite! Not surprising. We love Coffee and chocolates in this house and with both as main ingredients of this recipe, our response is automatic. We fell in love with it at first taste! Due to popular demand, I'm sharing the recipe and the goodness of this muffin which you can use to fill your Thanksgiving table or the craving of your sweet palate. A great "what can I bring?" food idea to parties you are invited to!


Print the recipe: Mocha Cappuccino Muffins



Ingredients
2 cups all-purpose flour
2 1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1 cup Almond milk (or your preferred milk)
1 packet of Starbucks via (your preferred blend)
1 teaspoon vanilla extract
1/2 cup butter, melted or coconut oil
1 egg, beaten
3/4 cup semisweet chocolate chips

Directions
In a bowl, combine all the dry ingredients: flour, salt, baking powder and sugar. In a separate bowl, pour milk and stir in coffee until fully mixed. Add butter, egg and vanilla. Pour liquid into the dry ingredients. Stir until it is moistened. Fold in chocolate chips and set aside. Grease muffin baking pans and fill about 2/3 full. Bake at 375 F for 15-20 minutes depending on your oven. Stick a toothpick through the muffin to test. If it comes out dry, it's done. Cool for 3 minutes then remove from pan onto a cooling wire racks.

Serve with coffee and your set!

Bonus tip: If you love your chocolate chips a lot, top your muffins with more chips before it goes inside the oven!
