Back to School is in full swing and keeping up with your kid's daily lunchbox demands require nothing more but an uncomplicated culinary creativity. It really doesn't need to be complex. In this recipe, I took inspiration from my favorite bagel sandwich at Bruegger's. One that my daughter also love. It's easy and quick to make which was more reason to include it in her perfect lunch options that I rotate each week.
What You'll Need:
Bagel - sliced
2 Organic Eggs
Organic American Cheese - 2 slices
Olive Oil
Salt and Pepper to taste
5 inch frying pan
Instructions: Cooking time from prep to finish 10 mins.
Note: If you don't have the 5 inch frying pan, just use a regular-sized frying pan.
Heat the pan and add about 1/2 teaspoon of olive oil (or your preferred oil). When the oil is warm enough, crack open one of the eggs and drop it on the pan. Poke the yolk and stir it to lightly mix. Sprinkle a dash of pepper and salt. When bottom of egg is cooked, flip it to cook the other side. Remove and place it on a plate. Cook other egg the same way. Next, toast the bagel slices (you can also do this while cooking eggs). Once done, assemble the sandwich. Place one of the cheese slices on bagel, followed by the cooked eggs then the second slice of cheese, top it off with the other half of the bagel.
Tip 1: You can cut the sandwich in two to make it easier to eat. Wrap it in wax paper, followed by a paper towel to retain heat then place inside the lunchbox. Partner it with your kid's favorite snack and that's it! Easy as 1-2-3.
Tip 2: Buy a bag of bagels, slice them and put in freezer. It makes them last longer and you'll always have a bagel ready when you need to make this recipe!
