I don't say things lightly but this soup is so good, it's easily a food for your soul as well. It's packed with powerful healing properties and bold flavors it's enough to bring your "grace" back without trying! Ahem, supernatural reference to those who is not on the know.
Back to my soup, this is one of the soups that I created that sustained my household during the flu invasion that made my husband and I sick. And during those times when solid food don't seem appealing at all, this soup nourished us back to better health. It's also good for the vegetarian soul.

Ingredients: (For a small batch)
32 oz of Organic vegetable broth
1 teaspoon Turmeric powder
6 pcs of dried Shiitake - "sliced" in small pieces pre-soaked
1 cup of extra firm organic tofu, cubed
1/2 cup ginger - crushed and pulped
salt and pepper to taste
Saute' tofu until golden brown or crispy on the edges. Then, pour vegetable broth in along with turmeric powder and ginger. Let it boil. Once boiling, add dried Shiitake and simmer soup until Shiitake is fully cooked or spices have infused its flavors to tofu. Sprinkle salt and pepper to taste.
