I should tell you that being married to a Vegetarian has its perk. It made me eat my veggies more! I also developed a healthier habit and when you're my age, it simply is THE best path to take! Age by no means go in reverse, so as we age, the more we need to think more of keeping ourselves healthy. But eating healthy shouldn't be too complicated or confusing or super-tedious in approach to achieving it.
Neither should it be like deer with headlights effect, where we stand frozen and spaced out when we think of "healthy food" - this especially if you're favorite food, like me, is FRENCH FRIES!
But if you also love Salads, again, like me, then you and me both are in luck with Fresh Express! Though it's not "officially" salad season for me, I was more than willing to try it. Free Salad? I'm on it! I went to Target where they're sold to get my greens and I could not believe my eyes. They have a wider variety of Salad mixes compared to my go-to-brand that I was almost beyond impressed!
The funny thing is, it was always next to my favorite brand but I never seem to notice them before. But now I know.
I went for the bag of Green and Crisp and had this Salad for lunch today. Being not so well today, it was a great meal option for a not-so-enthusiastic appetite like mine. Here is my own Salad creation:
Crisp Greens with Cranberry and Cashew Trail mix
Ingredients
2 cups of Green and Crisp Mix
1/2 cup of Cranberry Trail Mix (almonds lightly crushed)
1/8 cup of Cashews lightly crushed
2 tbsp fresh lemon juice (or more according to taste)
1 tsp Olive oil
Salt and pepper to taste
Mix all the Greens and dry ingredients together in a bowl. Drizzle with lemon and olive oil. Add Salt and pepper.
It's easy and quick and I enjoyed devouring it. The nuts and seeds gives me my protein requirements. And the Greens, that's my veggie fix for the day. Win!
Now the great thing about Fresh Express besides their wide selection, is their 30-Day Salad Swap. Why?Get this! You can swap your favorite high-calorie dishes with a lower-calorie salads which is literally based on that favorite meal of yours with recipes that's healthier!
Say instead of a Bacon Cheeseburger, you can swap it with a Bacon Cheeseburger Salad.
Chicken and Rice to Chicken Rice and Black Bean Salad
The list goes on.
My LIKES:
They have a wide selection of Greens and Mixes
They look fresher than my favorite brand
They're comparably priced
Dislikes:
They didn't have Organic ones at Target (or maybe they're out of stock?)
Though my dislike is not a deal-breaker, it would be nice if they do have an Organic selection. I also would love to try some of their recipes that I'm interested in. Now I know that there is nothing like eating the "real" version of your favorite meals - that goes for me and my rice dishes - but sometimes you just gotta eat the better version of it! I can't guarantee it would taste the same but you won't know until you try!
