Black Bean & Salsa Burrito- Homestyle

If you love Mexican like me, you'll like this recipe. It's one of my all-time favorites. It's quick, easy to prepare and it suits both Vegetarian & meat-eaters. It's a life saver, especially when you're stressing about what you'll have for breakfast, lunch or even dinner. Best for mommy on the go like me! Feel free to be creative with this recipe to suit your taste & number of people eating it.

To feed 3 people
:

Ingredients:

4 eggs
1/2 cup Black Bean & Corn Salsa (mild) - if you like it with a zing like me
3 tablespoon shredded low-fat cheese - i use havarti or muenster
3 small wheat Tortilla (or you can eat it "naked" with rice)
1tbsp olive oil

Make it : Scramble eggs. Cook it halfway then fold in Black beans & Corn Salsa, mix the ingredients together to scrambled form, add in shredded cheese until melted. Fill tortilla with the mixture. Roll it and voila! Bon appetit !
